Ingredients

  • 3 cups cooked chicken, diced or shredded
  • 1 cup dill pickles, finely chopped
  • 1/2 cup mayonnaise
  • 1/2 cup celery, finely chopped
  • 1/3 cup green onions, sliced
  • 2 tablespoons pickle juice (from the pickle jar)
  • 1 tablespoon dill, chopped fresh or 1 teaspoon dried dill
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon kosher salt do not use table salt or it will be too salty...start with a little and add more to taste

Equipment

  • Chef's Knife
  • Cutting Board

Method

  1. Start by gathering all your ingredients. It’s always a good idea to have everything ready to go. This step makes the cooking process smoother and more enjoyable.
  2. In a large mixing bowl, add the cooked chicken. If using rotisserie chicken, ensure it’s diced or shredded into bite-sized pieces for easy mixing.
  3. Next, incorporate the finely chopped dill pickles. These little gems are what bring both flavor and texture to the salad.
  4. Now, add the mayonnaise. Mix it in thoroughly; this is what makes the salad creamy and rich. You want every piece of chicken to be coated.
  5. In goes the finely chopped celery. This is where you'll get that satisfying crunch. Stir gently to avoid breaking up the chicken.
  6. Add the sliced green onions for a bit of freshness. They will also contribute a lovely pop of color.
  7. Pour in the pickle juice and add the chopped dill. This will enhance the pickle flavor and give it that refreshing zing.
  8. Sprinkle in the garlic powder and kosher salt. Stir everything together until well combined, ensuring that the seasonings are evenly distributed.
  9. Let the salad sit for about 30 minutes. This resting time allows the flavors to meld beautifully, so don’t skip this step!
  10. Once chilled, taste the salad and adjust the seasoning if needed. Add more salt if necessary or even a dash of pepper for a little kick.
  11. Finally, serve the Dill Pickle Chicken Salad on sliced bread, croissants, or as lettuce wraps for a low-carb version. Enjoy your delicious creation!
